To change a dimension’s color palette in Tableau, you can use the Color legend in addition to the Marks card. By right-clicking (or Control-clicking on Mac) the Color legend and selecting 'Edit Colors', you can access and modify the color palette assigned to different data items.

To edit a categorical color legend: Right-click (Control-click on Mac) the legend and select Edit Colors. Select a data item in the list on the left, and then select a new color in the palette on the right. Click OK.
