In Settings >> Objects Setup >> New Incident Field >> Field Type >> Select from Boolean, Date Picker, Grid (table) HTML, Long Text, Markdown, Multi-select/Array, number, role, Short Text, Tags, Timer/SLA, URL or user. In this instance, Short Text (maximum of 60,000 characters) does not suit so long text it is!
